Key Learning Objectives

By the end of this workshop, participants will be able to:

  • Understand the principles of professional table service in a restaurant setting.
  • Demonstrate different service styles (e.g., American, French, Silver, Gueridon, Buffet).
  • Effectively interact with guests, applying professional communication and customer service techniques.
  • Properly set up and clear a table according to service standards.
  • Understand menu presentation and suggestive selling techniques to enhance the guest experience.
  • Handle guest complaints and special requests in a professional manner.
  • Apply hygiene and safety protocols in table service operations.

Course Format

Introduction (20 minutes)

Overview of table service and hospitality standards.

Demonstration (40 minutes):

Trainer-led demonstration of different service styles.

Hands-on Practice (1 hour):

Participants practice service techniques in a simulated restaurant setting.

Role-Playing Scenarios (30 minutes):

Handling guest interactions, complaints, and upselling techniques.

Feedback & Q&A (30 minutes):

Group discussion, feedback from trainers, and participant reflections.

  • Menus & order pads for role-playing scenarios.
  • Training videos & printed guides on table service styles.
  • Props for simulation exercises (e.g., trays, serving utensils).

Assessment

  • Practical Evaluation: Participants are observed performing table service tasks.
  • Role-Play Assessment: Handling a guest interaction and managing a complaint.
  • Feedback Session: Self-reflection and peer feedback.
  • Certificate of Participation (optional, for community participants).
